Roast Lamb

Pre-Heat BBQ or Oven to 200 C.

Sear the meat on a hot pan

Place on a baking tray.

Cook for 2 hours. Cook at high heat (240C.) for 30 mins initially if you want crispy skin.

Cook till golden brown then add your vegetables, the harder ones first, keep adding every 15 mins

Cook for another hour

Makes sure you check every 20 mins, pour the juices over the dish.

Places fresh garlic and herbs in 20 mins before serving.
